Between Old and New
We begin in Tokyo with a local who knows the six-seat bars and early-morning markets. Then the bullet train carries us to Kyoto, where we walk the temple paths before the crowds arrive.
Halfway through, we slow down in the Kiso Valley, hiking an old post road and sleeping on tatami in a family ryokan. Dinner is twelve small courses and a long soak in the onsen.
